This looks SO good – had to share and also wanted an easy place to find it again. LOL
I will definitely make this quesadilla one day soon. When I do, I’ll post about it and hopefully have pictures right here.

Since we lived across the street from each other I have bartended in So. Cal. Night clubs And restaurants (all of the 70′s and 80′s) and owned 4 places of my own…Chefs school twice! Got some pretty good recipes to send you. Maggiano’s at the Grove said I had the Best Eggplant Parm. the manager and Head Chef had ever had. My Pork shoulder Tacos w/ Mango Salsa …put it in the pan and it does it’s thing, 2 hrs. later just pull it apart, make the Salsa (which is more of a relish). Gooooooooood!
